Yup, you heard right, you can enjoy delicious  banana pancakes without any dairy or eggs!

Our beautiful friend Chanel, who is currently traveling the world, has recently been experimenting with vegan recipes and we’ll be sharing some of them with you! Here is her take on breakfast pancakes.

1 banana, mashed
1 cup all-purpose flour
1 tsp baking powder
1 Tbsp sugar
3/4 – 1 cup vegan milk (I used rice milk, but you can use oat or almond too)
Oil / Coconut butter for frying
Maple syrup

Add the dry ingredients to the mashed banana and combine
Slowly add the milk until the consistency resembles a thick pancake mix (slightly clumpy is good – don’t overmix)
Pour dollops with a tablespoon onto a super hot pan and cook on medium heat
Turn over once bubbles appear
Cook for another 2-3min on the other side
Serve hot with maple syrup
